Hoecakes are a type of cornbread fried in cooking oil and they got that name because field hands used to cook them over fires on garden hoes.
1 1/2 cup cornmeal
1/2 cup all-purpose flour
1/4 cup vegetable oil
1 1/4 cup buttermilk
1/3 cup sugar
2 eggs beaten
1 tsp. salt
1 tsp. baking soda
Combine cornmeal, flour, sugar, salt and baking soda in medium bowl. Add eggs, vegetable oil and buttermilk. Stir only until ingredients are moistened. Pour into heavily oiled skillet (1/4 cup batter for each hoecake). Fry over medium-high heat for 1 to 2 minutes, or until golden brown on each side. Use additional oil if necessary. Drain on paper towels. Serve immediately.
I like to dip mine in syrup!!:)
